Chateau Marmont Hotel Bar’s Matt Schaefer

The iconic Chateau Marmont on Sunset Boulevard always feels as if it’s out of my league. Just like Ryan Gosling, the beautiful Chateau could never be my regular hang. And last year when word got out that the hotel had a new bar that only those in the know could get into, it made sense for the venue. But this past Monday, new bar guy Matt Schaefer (formerly of Big Bar in Los Feliz) debuted his new cocktail menus (one regular, the other secret) and told me that it’s actually quite easy to get into that newish 30-person capacity lobby bar. All you have to do is make a reservation. Yeah, making a reservation at a bar is still too fancy for me. But if that’s your thing then you probably won’t even bat an eyelash when I also tell you that the cocktails here range from $18 to $20.

But here are a few pictures of what’s available. If you see something you like, you have about a couple of months before it disappears as the menus will be switched out every two to three months, you know, like seasonally.

Short & Stout (Pousse cafe style): Sazerac, lemon, Angostura bitters, honey, oatmeal stout

Forbidden Fizz: Rittenhouse, Miracle Mile Bitters Forbidden Bitters, lime juice, sugar, house made grenadine, egg white

Frozen Rose: Martin Miller, aquavit, orgeat, lemon juice, rosewater, orange bitters, champagne float

Off the regular cocktail menu, Lady Macbeth: Moet champagne and 20-yr tawny port
